Greystone Learning Lab: Bees, Grains, & Gardens
Tuesday, May 5, 2026 | 9 AM – 3 PM
Spend an inspiring day at the Culinary Institute of America’s historic Greystone campus exploring the living systems that shape flavor, nutrition, and sustainability. From the working hive to the freshly baked loaf and the vibrant culinary gardens, you will explore, taste, and engage with expert practitioners who seamlessly connect agriculture to culinary craft. This immersive experience includes tactile demonstrations, guided tastings, and a seasonal meal (complete with a garden-inspired cocktail or mocktail) that brings the day’s lessons directly to the plate.
Plan to arrive at the CIA Copia campus by 9:00 a.m. for registration, which will take place in the Atrium (1st floor) of the CIA. The shuttle to Greystone will depart by 9:15 a.m. The four-hour learning lab experience will begin at 10 a.m. and conclude by 2 p.m. The shuttle will return to Copia by 3:00 p.m.
Space is limited; register early to secure your spot.

3:00 PM Winery tour buses return to Copia

Cancellation Policy for Optional Summit Add-On:
Cancellations are permitted up to 30 days in advance of the conference, and tuition will be refund for these activities minus a $50 administrative cancellation fee.
There are no refunds or substitutions possible within 30 or fewer days of Summit start date.
